First lets get the Airbag thing out of the way:

Do it at your own risk. Do your research. Don't get hurt.
Disconnecting the car battery for a while (at least 5 minutes - my car was sitting without power for a couple weeks now) and it "should" be safe.
Once you are ok with doing that, and mentally prepared yourself if it's your first time, it's quite simple from this point.

1. Locate the two torx screws on each side of the steering wheel (they will likely have covers, just pull them off with your fingers). You will need a size T30 screw bit or driver. Take them off. Then just pull the airbag off the wheel - there will be wires so you won't be able to take it completely off yet.

2. Disconnect the airbag wires and safely put it aside. Watch the plastic latches... I managed to brake one off...

3. Get a 17mm socket and undo the bolt holding the steering wheel to the column. Pull on the steering wheel until it comes off. Mine actually came off really easy with some slight pulling and minor rotating left and right. However I heard people saying that it's not always that smooth.

4. The cables are connected to a module that allows the steering wheel to rotate without pulling on the wires (a.k.a. the clock spring). There is a plastic cover on top of the socket that holds the wires to this module. Pull this cover off and then you can disconnect the socket. I popped the cover with a flat screwdriver and carefully prying on each side till it came off.

That's it. Have fun with no steering wheel. So much room now.

Remember you will most likely need an adapter to install an aftermarket wheel because as it appears the models with airbags don't come with a hub that you can mount a 6 bolt pattern wheels.

FYI here are some pictures of what the OE hub looks like once the steering wheel is removed:
